Ingredients

  • wholemeal flour - 8 oz (230 g) spelt or wheat
  • baking powder - 1/2 tsp.
  • eggs - 1 pc.
  • olive oil - 3 1/3 tbsp (50 ml)
  • quinoa - 1.8 oz (50 g) boiled
  • chocolate - 1.8 oz (50 g)
  • honey - 1.4 oz (40 g)
  • salt - 1 small pinch
  • orange peel - 4 strips (only the orange part)

These cookies are very easy to prepare in a blender, but can also be kneaded by hand.

When we use kitchen helpers, we always save time and effort, so I suggest you give it a try.

Put the orange peel and flour in the appliance and grind them for a few seconds. This way, in addition to making the wholemeal flour finer, but also grinding it along with the citrus peel, you will flavor it better than if the peel is grated separately by hand.

Mix with a pinch of salt and baking powder.

Add honey (thicker), olive oil, chocolate, quinoa, egg and turn on the appliance again at medium speed for a few seconds.

Decide if the dough is too sticky and if necessary add more flour and grind for a while longer.

That way, the cookie dough is ready in seconds.

If you knead by hand, you have to add the grated chocolate and the grains of the boiled quinoa will be felt, which is still good.

Roll it out between two layers of baking paper and cut out cookies in a shape you prefer. Gather the cut outs, roll them out again and do the same, until you run out of dough.

Arrange the wholemeal cookies in a baking tray lined with parchment paper and place them in a preheated oven at 320°F (160°C) for 20-22 minutes.

The sweetness of these cookies is very delicate, so if you prefer them to be sweeter, add more honey or another sweetener.
