Ingredients

  • spelt flour - 4.2 oz (120 g)
  • fine oats - 6 tbsp.
  • brown sugar - 4 - 5 tbsp.
  • almonds - 3 - 4 tbsp. (grinded)
  • vanilla sugar - 1/2 tbsp (8 g)
  • lemon juice - 2 tbsp.
  • soy milk - 4 tbsp. (or coconut)
  • eggs - 1 pc.
  • baking powder - 1 tsp.
  • salt - 1 pinch
  • olive oil - 3 tbsp.

How to make

Mix all of the ingredients into a bowl - first the dry, then the liquid. Mix with a fork, until everything is homogenized and a soft dough is obtained.

Scoop a spoonful of it and spread it out into a round shape onto baking paper. Make sure that there is some distance between them, because the cookies will puff up a bit.

Put them in a preheated oven at 360°F (180°C) for 20-25 minutes, or until they aquire a dark color around the edges.

Once out of the oven, leave the cookies to cool, because if you touch them while they are warm they will break, since they are soft. After they cool, they harden and become pleasantly crunchy.

For an even healthier option, you can replace the brown sugar with as much honey as you like.

They are suitable for snacking at any time.
