How to make
Separate the whites from the yolks into bowls. Beat the first into a white mixture for 5 minutes with a pinch of salt.
Add the sugar to the yolks and beat with a mixer, until a smooth cream is obtained.
Sift the flour, starch, baking powder and a pinch of salt. Add the chocolate drops.
Pour the oil into the bowl with the egg cream. Add the dry mixture in portions, by stirring with a spoon.
Add the peeled pears cut into small pieces. Then add the spoonfuls of the beaten egg whites.
Line a 8.7″ (22 cm) round cake tin with baking paper.
Bake this impressive pear cake at 340°F (170°C) in a preheated oven with a fan.
Check it with a wooden skewer to see if it is fully baked. The baked fruit cake is then sprinkled with powdered sugar.
