How to make
Finely chop the onion and cut the carrot into cubes.
Heat 1/2 cup of olive oil in a pot and add the chopped vegetables.
Fry briefly, then add the peas.
Pour about a liter of warm water and boil the vegetables for 10 minutes, then add the washed rice, season with salt and a pinch of dill.
Boil the vegetable soup, until the rice is fully cooked.
In a bowl, beat one egg yolk with 3 tablespoons of yogurt.
Scoop a ladle of the warm pea soup and pour it into the thickener.
Pour it back into the pot and temper well. Serve the Risi e Bisi Soup seasoned with dill and lemon juice.
