Ingredients

  • eggs - 2 pcs.
  • sugar - 1 cup
  • flour - 2 cups
  • oil - 1/2 cup
  • carrots - 7 oz (200 g) finely grated
  • cinnamon - 1 tsp.
  • baking soda - 1 tsp.
  • for the filling
  • mascarpone - 3.5 oz (100 g)
  • liquid cream - 4/5 cup (200 ml)
  • powdered sugar - 2 - 3 tbsp.

How to make

Beat the eggs with the sugar and add the soda.

Start pouring the oil in a thin stream, by stirring constantly. Add half of the carrots, half of the flour, cinnamon and mix.

Add the rest of the flour and carrots and mix again. Grease the molds and pour the mixture.

Bake in a heated oven at 360°F (180°C) for about 30 minutes or until they're fully baked.

Flatten the bottom of the muffins with a knife, so they don't wobble and save the cut outs.

Beat the cream with the powdered sugar and add the mascarpone.

Beat again and fill the chilled muffins. Sprinkle them with crumbs from the cut outs.

The cupcakes with carrots and mascarpone are very tasty.
