How to make
In a bowl beat the eggs with the sugar with a wire whisk. Add the oil, brewed coffee, cinnamon, vanilla sugar. Mix everything well.
Peel and grate the carrot, cut the peeled apple into small cubes and cut the dried apricots into small pieces.
They are added into the bowl and then pour the standard flour along with the baking powder, by sifting through a sieve.
A cake mixture should be obtained, from which 2 tablespoons are poured into paper muffin cups. The muffin cups are placed in a silicone muffin molds and arranged in a wide tray.
Sprinkle them with a pinch of oatmeal on top. Bake the muffins in a preheated oven at 360°F (180 degrees) for 20-25 minutes, check them with a toothpick, which should come out dry.
Serve them chilled with coffee or herbal tea. Tasty and healthy!
