Ingredients

  • BUTTER DOUGH
  • white flour - 10.5 oz (300 g)
  • cocoa - 1.1 oz (30 g) high percentage, full fat
  • baking powder - 1/2 tsp.
  • baking soda - 1/2 tsp.
  • salt - 1/4 tsp.
  • butter - 6 oz (170 g) room temperature
  • sugar - 5.3 oz (150 g)
  • eggs - 1 pc. (large)
  • vanilla extract - 1 tsp.
  • buttermilk - 6.1 fl oz (180 ml)
  • confectionery paint - 1 tbsp. (red gel)
  • FILLING FOR THE COOKIES
  • white chocolate - 5.3 oz (150 g)
  • cream - 3.4 fl oz (100 ml) high percentage
  • coconut - 1 tbsp.
  • white chocolate - 1.1 oz (30 g) for decoration

How to make

Oven - 370°F (190°C);

Flat tray covered with baking paper.

In a bowl, mix the buttermilk with the red paint, until a homogeneous mixture is obtained.

In a bowl sift the flour, cocoa, baking powder, baking soda and salt. Mix everything.

In the bowl of the mixer, beat the soft, butter until a creamy mixture is obtained. Add the sugar and beat on high speed for about 3 minutes.

Add the beaten egg, vanilla, beat again, until it is absorbed and add the flour mixture into three portions, by alternating with two portions of buttermilk and finishing off with flour.

Scrape the bottom of the bowl with a spatula. With a small ice cream scoop, scoop and place the balls at a distance from each other in the tray onto the baking paper. The biscuit is formed with wet fingers.

Bake at 370°F (190°C) for about 8 to 10 minutes. As soon as cracks appear on top of the biscuit, it means that it is baked. Remove them and leave them for 10 minutes in the tray, then arrange them on a wire rack, until they have completely cooled.

If the biscuit is required to be heart-shaped, while it's still warm, cut it with the appropriate cookie cutter.

Filling:

Bake the coconut in a non greased pan, until a golden color is obtained. It's left to cooling down.

Heat the cream to boiling point and pour the pieces of chocolate. Stir, until a homogeneous mixture is obtained, add the coconut and stir. Cool to room temperature.

Then stick the biscuits two by two with the coconut and chocolate.

Optionally, you can decorate them with strips of melted chocolate, by using a piping bag.

Note: Buttermilk is prepared by adding 1 tbsp. of lemon juice to lukewarm milk. Wait 10-15 minutes and add it to the dough.

The biscuits can be shaped with gloves, because the paint is very strong and colors the hand.
