How to make
Beat the egg whites with the sugar, lemon juice and a pinch of salt. You need a thick and smooth meringue, so it is best to beat in a water bath on low heat for at least 4 minutes, then remove it from the water bath and continue beating for another 4 minutes.
Grind the walnuts with the dates in a blender. If the dried fruit are softer, process the two products separately so that the walnuts do not get wet and turn into granules.
Mix the two mixtures slowly in a smooth motion.
Fill the mixture into a piping bag and pipe out the delicate walnut cookies onto a tray lined with parchment paper.
Bake the walnut cookies at 300°F (150°C) for 15-20 minutes, but also look through the oven window to judge by the color. The baking time depends on the size and thickness of the walnut cookies. After you turn off the oven, leave them inside until all the cookies cool. That way they will dry out and become crunchy and melt in your mouth like sweet meringues.
