How to make
Chop the walnuts very finely with a sharp knife. Even if there is a bigger piece left, it's not a big deal. In this recipe, we do not aim to blend them perfectly like the classic walnut cookies. The pieces of walnuts should be felt.
Mix the sesame seeds, half of the powdered sugar, vanilla and walnuts.
Put the egg whites in a dry bowl and this is important, because if there are drops of water or moisture, they will not be able to be beaten into a white mixture, which is our goal.
Add a pinch of salt and start beating with a mixter on a low speed first. When bubbles appear and it starts to turn white, increase the speed to the maximum and beat, until a thick white cream is obtained.
Pour the sugar in portions, while beating at all times. Once it is completely absorbed by the egg whites, they will thicken a little more.
Start adding the walnut mixture in several portions, by stirring gently and carefully with a wooden spoon, so that the white mixture does not lose its volume. Mix everything well.
Put a spoonful or two of the mixture in the oven tray lined with baking paper. Make sure they have some a distance between them.
Bake them in a preheated oven at 320°F (160°C) for 40 minutes. Keep an eye on them through the oven window, but do not open it, because they will lose their volume.
Leave the walnut cookies to cool to room temperature before eating them.
The walnuts cookies with sesame seeds are ready.
