How to make
Wait for the water to a boil and place the washed amaranth in it to boil for about 20 minutes.
Blend the pumpkin along with the cinnamon, oil and sugar. Once the amaranth is cooked, add the pumpkin mousse and stir over low heat for 10 minutes, until the water evaporates completely.
Transfer the finished dessert into bowls and leave it to cool. Decorate it with dried fruit and nuts.
