How to make
Cut the kidneys in half and soak them in cold water with 3 tbsp. of vinegar. Leave them in the refrigerator for a few hours. Wash them and boil them with some salt.
Strain the boiled kidneys from the water, cut them or leave them in halves.
Pour the oil into a pan, leave it to heat up, add the pork kidneys, wine and chopped leeks (cut into circles).
Season the appetizer with spices and after the wine evaporates you can serve it by decorating it with a carrot rose.
