How to cook
After you have washed the meat well, cut it into larger pieces. Put it in a pot of water, add the bay leaf, peppercorns and a little salt.
Put it on the stove and leave the mixture to boil. From time to time, remove the froth and leave it to boil, until it's ready. Put the finely chopped onion and garlic in a pan, along with the oil.
Stir and add the bulgur along with the rice, which have been pre-washed and strained.
Stir and add the paprika, by pouring 4 cups from the broth in which you have boiled the meat. Also add the spices. Stir all of this and pour the mixture into a baking pan.
Arrange the cooked pieces of meat on the bulgur.
Sprinkle the lamb with paprika and pour another 3 cups of hot water.
Put the lamb with rice in the oven and bake the dish for about 40 minutes.
