Ingredients

  • gizzards - 1.3 lb (600 g)
  • rice - 1 cup (250 ml)
  • fresh mushrooms - 10.5 oz (300 g)
  • onion - 1 onion
  • universal seasoning - 1 tsp.
  • oil - 3 1/3 tbsp (50 ml)
  • salt
  • black pepper
  • spearmint
  • oregano
  • parsley

How to make

Clean the gizzards and wash them well. Boil them until done in lightly salted water. Best in a pressure cooker.

Wash the mushrooms, cut them and blanch them for 5 minutes. Strain the water.

Cut the onion and stew it in the oil, by adding a little water. As soon as the water evaporates and only fat remains, add the washed rice.

Fry it until it becomes transparent, by stirring constantly. Add the cooked gizzards, mushrooms and spices to the rice. Stir.

Strain the broth and pour 3 cups from it to the rice. Leave it on the stove until it boils.

Pour the contents into a baking pan and bake in a heated oven at 390°F (200°C) until the rice is ready.

Serve the oven-baked rice sprinkled with fresh parsley.
