Stuck together pumpkin biscuits with delicious filling for home comfort and warmth, even on the coldest days.
Beat the egg with both types of sugar, oil, yogurt and pumpkin puree. A perfectly smooth mixture should be obtained.
Sift the flour with the baking powder and cinnamon. Add it in portions to the liquid mixture and mix, until a homogeneous mixture is obtained. The goal is to have a texture thicker than cake batter. As it depends on the size of the egg used and how thin the pumpkin puree is, you may need to add more flour.
Preheat the oven to 360°F (180°C).
Line 2 baking trays with baking paper and use a spoon to place small piles of dough at a distance from each other. Make them into round shapes with a spoon like pumpkin biscuits.
Bake them for 15-18 minutes, or until the soft biscuits aquire an appetizing color on the edges and begin to smell nice.
Leave them to cool and prepare the delicious filling.
Beat all of the ingredients, until a homogeneous mixture is obtained. If you do not want to see chunks of cottage cheese, blend the cream in a blender to make it smoother.
The result is a delicious filling, which I almost ate up, while I was tasting it. In combination with the pumpkin biscuits, however, it is even more delicious.
