How to make
Rub the pork ribs (they should be whole) with black pepper, paprika, salt, the herbs and olive oil. Wrap them with cling film and refrigerate them overnight.
After they have been left long enough and have absorbed the flavors well, remove the cling film, smear them with honey and mustard and wrap them again, but this time with aluminum foil.
Preheat the oven to 360°F (180°C) and bake the tightly wrapped ribs for 1 hour, then remove the foil, increase the heat to 410°F (210°C) and continue baking for about 15-20 minutes on each side or until they aquire the desired color. You can cut the meat to check how cooked they are, since it depends on the thickness of the ribs and how much fat there is on them.
When the oven-baked pork ribs with honey are ready, remove them from the oven, wrap them again for 5 minutes before cutting them into individual ribs and serve them.
