"Because kids deserve the best - healthy muffins with oatmeal and jam"

Ingredients

  • oats - 3.5 oz (100 g)
  • spelt flour - 3.5 oz (100 g) or wheat, wholemeal
  • eggs - 2 pcs.
  • yogurt - 4.2 oz (120 g)
  • honey - 3 1/3 tbsp (50 g)
  • brown sugar - 3 1/3 tbsp (50 g)
  • baking powder - 2 tsp.
  • oil - 2 2/3 tbsp (40 ml)
  • bananas - 9 oz (250 g)
  • jam - 6 - 7 tbsp. (fruit of choice)
  • salt - 1 pinch
  • lemon juice - 1 tbsp. (freshly squeezed)
  • powdered sugar - for sprinkling (optional)

How to make

The oatmeal is grinded into a fine flour in a blender, food processor with a suitable function or with a simple coffee grinder.

In a bowl, mix the oatmeal, spelt flour, salt and baking powder. Sift the dry mixture.

Beat the eggs with the brown sugar and gradually add the honey, lemon juice, yoghurt and the fruit - mashed or blended.

Sift the dry mixture once more into dry mixture in portions and mix, until a homogeneous mixture is obtained.

In 12-14 muffin molds, place paper muffin cups and fill them, by leaving at least one finger, so that there's room for them to swell up. Add one tsp. from the jam you picked.

The muffins are baked in a preheated oven at 360°F (180 degrees) for 20-25 minutes.

Leave them to cool on a wire rack, removed from the molds.

Sprinkle them with powdered sugar if you like. They are healthy, tasty and with a very pleasant texture. Serve them to your children to satisfy their need for sweets and at the same time you will know, that they are good for their health.
