Ingredients

  • jam - 4.6 oz (130 g) of choice
  • water - 4.4 fl oz (130 ml)
  • baking powder - 1 tbsp (10 g)
  • carob powder - 2 tbsp.
  • brown sugar - 2 tbsp.
  • coconut flour - 3.5 oz (100 g)
  • coconut oil - 2 - 3 tbsp. liquid
  • powdered sugar - for sprinkling

How to make

Dissolve the jam in the water, add the two spoons of sugar and the baking powder. Beat with a wire whisk.

Add two tablespoons of carob powder. Mix. Next up is the coconut oil and flour.

A rather thick batter is obtained, which is distributed into six muffin tins, which we have previously greased with coconut oil or we have placed a non-stick paper muffin cup in.

Bake in a moderate oven at 360°F (180°C) until done, about 20-25 minutes.

Sprinkle the baked muffins with a little powdered sugar.

Since they are gluten-free and egg-free, there is no binding agent, the muffins are crumbly, but I assure you, they are incredibly delicious. The carob flour has a sweet taste, so only two spoons of sugar are enough to make really delicious muffins.
