Ingredients

  • spelt flour - 1.5 cups
  • coconut sugar - 1 cup
  • dark cocoa - 1/4 cup
  • spelt milk - 1 cup
  • olive oil - 6 - 7 tbsp.
  • baking soda - 1 tsp.
  • lemon juice - the juice from half a lemon
  • salt - a pinch
  • walnuts - 2/3 cup

How to make

Crush the walnuts with your hands and set them aside.

Preheat the oven to 360°F (180°C).

Put the remaining ingredients into a bowl and mix them with a fork, spatula or a wire whisk, until a smooth and shiny cake mixture forms.

Add the crushed walnuts and stir for a short while.

Bake in a preheated oven at 360°F (180°C) for about 30-35 minutes or until they're fully baked. You can check with a toothpick and if it comes out dry, they are ready!

Serve the muffins with coffee or combine them with grapes. They're just great!
