Ingredients

  • flour - 4.2 oz (120 g) + for sprinkling on the worktop
  • fine semolina - 2.6 oz (75 g)
  • egg - 1 small egg
  • butter - 3.5 oz (100 g) cold, very hard
  • emmental - 1.8 oz (50 g) grated
  • parmesan - 1.8 oz (50 g) finely grated
  • sesame seeds - 2 tbsp. for the dough + for sprinkling
  • salt - 1/4 tsp. (or by taste)
  • sugar - 2 tsp (10 g)
  • black pepper - 1/4 tsp. (or by taste)
  • rosemary - 1 tbsp.
  • oregano - 1 tsp.
  • paprika - 1/2 level top tsp.
  • chili pepper - 2 pinches

How to make

Cut the cold butter in the flour mixed with semolina. Rub them with your fingers until a crumbly mixture is obtained.

Add the egg, sesame seeds, spices, salt, sugar and both types of cheese - finely grated.

Knead a smooth dough, which should be soft but not too soft. If it is too soft, then your egg was bigger and you will have to add some more flour.

Form the dough into a ball, wrap it in cling film and refrigerate it for 30 minutes.

You can shape the savory cookies by hand, by tearing pieces of the dough and rolling them into balls, which you can then flatten. You can also roll it out onto a floured surface and cut out the shapes. The condition is that they are thinner.

Arrange the shaped savory cookies in two trays covered with baking paper, sprinkle them with sesame seeds and put them in a preheated oven at 360°F (180 degrees) for 15 minutes each.

In order for the sesame to stick better, if you wish, spread them a beaten egg white with a drop of oil and a pinch of salt.

Once they cool, serve them with delicious vegetable spreads or for muching on at any time.
