"When a man starts talking about pork pleats it`s worth listening to him with both ears and a large empty plate."

Ingredients

  • pork fillet - 2.5 lb (1.2 kg)
  • flour - 1 and 1/2 tablespoons or starch
  • mushrooms - 1 tray fresh
  • white wine - 1 cupful
  • black pepper - ground
  • pancakes - ready - made, according to the number of people
  • walnuts - 1 tsp, a stuffing of crushed ones
  • ham - 5 oz (150 g)
  • chicken fillet - 5 oz (150 g)
  • cheese - 7 oz (200 g) grated
  • parsley
  • soya sauce
  • mustard - 1 scoop
measures

How to make

Wash the fillets and dry them. Cleave in 2 to obtain a flat surface which is then divided into 3 strips lengthwise. Leave about 1 inch of uncut space on the bottom, so that the pieces do not separate. Sprinkle it with ground pepper and salt to taste. The strips are weaved like braided hair.

Roll them in flour and fry them in preheated oil. Leave in a water bath for about 20 minutes. Roll up the pancakes with a mixture of ground walnuts, pre-steamed in butter mushrooms, ham, chicken. On each pancake, shred some cheese.

Drain off the oil form the frying of the pleats and put them on the pancakes that serve as a bed. Thicken the oil from frying with 2 spoons of flour or starch, add wine, soya sauce, parsley, mustard and boil for about 5 minutes until the sauce thickens.

Top the pancakes and pleats with the sauce and serve.
