Ingredients

  • pork - 14 oz (400 g)
  • onion - 1 onion
  • sweet corn - 1/2 small tin
  • red peppers - 2 pcs. (roasted and peeled)
  • hot peppers - 1 pc.
  • tomatoes - 2 pcs. (peeled and diced)
  • oil - 2 tbsp.
  • tortillas - 6 pcs.
  • salt
  • black pepper
  • quesadilla seasoning - ready *
  • grated cheddar - for garnish

How to make

Cut the pork into small cubes.

Cut the onion into small pieces, peel the tomatoes and cut them into cubes, the red peppers into strips and the hot peppers into small pieces.

Heat the oil in a deep frying pan at a moderate temperature on the stove and stew the meat with a little water for about 15 minutes. Add the onion and fry it until it softens.

Add the chopped peppers and corn. Cook and stir periodically for about 5 minutes.

Add the tomatoes. Season with spices and cover it with a lid. Let it stew for about 15 minutes.

Heat the tortillas on the hob for about a minute on each side on low heat, sprinkle them with grated cheddar and add the filling on top.

Sprinkle them with cheddar again and roll them up.

* The seasoning for quesadilla contains onion and garlic powder, chili, cumin, oregano.
