  • red roasted peppers - 8 oz (230 g) peeled
  • walnuts - 3 oz (90 g)
  • olive oil - 1.8 oz (50 g)
  • garlic - 2 - 3 cloves
  • pomegranate molasses - 2 tbsp.
  • lemon juice - 1 tbsp. or by taste (or lime)
  • cayenne pepper - 1 - 2 dried peppers
  • paprika - 1 pinch
  • ground cumin - 2 pinches
  • salt - optional

It is believed, that the homeland of this fragrant spread is Syria, but it is also found in many other countries in the Arab world.

Characteristic of muhammara is the sweet taste coming from pomegranate and the spiciness added by cayenne pepper. However, it can always be balanced according to everyone's tastes.

For example, add more lemon or lime and take away from the sweetness by adding just a spoonful of molasses. For the spiciness of the spread, also be guided by your preferences or those of your guests.

The first step in preparing the muhammara is to soak the walnuts in water for 1 hour.

Put the roasted and peeled red peppers in a blender. If they are canned, keep in mind that they may be sour (depending on how they are canned) and in this case be sure to avoid lemon juice.

Add the peeled garlic cloves, pomegranate molasses, strained hydrated walnuts, dried hot peppers and spices. You can also add a little salt.

Blend everything into a smooth or slightly lumpy consistency.

Now is the time to add the olive oil, the aim being to obtain a light emulsion. Therefore, pour it in portions and turn on the appliance again, but at a lower speed. If desired, you can thicken it further with a little breadcrumbs.

Serve the finished spread in a bowl with toasted slices or a little more modern - into cups with fresh vegetable sticks (cucumber, carrot).
