How to make
Cut the core of the lettuce and the pear into long pieces and squeeze half of the lime juice on them.
Roast the pumpkin seeds and raisins briefly over a moderate heat and leave them to cool.
Mix the strawberry syrup with the remaining lime juice and if desired, add two pinches of salt for contrast.
Arrange the lettuce and pears into two plates and pour olive oil over them. Crumble the blue cheese on top of each and sprinkle the pumpkin seeds and raisins.
Drizzle with the balsamic reduction and strawberry syrup with lime.
Serve the vegetable salad as individual portions for an appetizer or salad in company with a glass of quality white wine.
