"A quick, easy and delicious salad with edamame and spring onions for your festive table."

Ingredients

  • edamame - 7 oz (200 g) boiled (or canned)
  • spring onions - 3 stalks
  • capers - 3 tsp.
  • red pepper - about 3.5 oz (100 g) roasted and peeled
  • parsley - 2 - 3 stalks
  • olive oil - to taste
  • vinegar - to taste (wine)
  • salt - to taste

How to make

Strain the cooked edamame beans. I use canned ones without any additives - just salt and water.

Put them in a bowl and add the chopped spring onions, chopped parsley, pickled capers and red roasted pepper cut into strips.

Season the salad with a dressing of olive oil, vinegar and salt to taste.

You can experiment by adding dried marinated tomatoes, some chopped walnuts or other nuts.

Serve the festive salad on your Christmas Eve table or on any other suitable occasion - quick, easy and delicious.
