How to make
Wash the quinoa and leave it to simmer for about 8 minutes.
Then blanch the broccoli.
Cut the onions, peppers and carrots and fry them in a deep pan with olive oil along with the garlic paste.
Season with salt and black pepper and transfer into a large baking pan.
Add the boiled quinoa along with the boiling water.
Add the peas, broccoli and sliced tomatoes.
Sprinkle with olive oil, salt and oregano and bake the vegetable casserole at 200°C until it's done.
If desired, you can serve the dish with some sauce.
The lean dish with quinoa and vegetables is very tasty.
