"One of the most delicious fish sauces you have ever tried"

Ingredients

  • Main sauce
  • soy milk - 3/4 cup (150 ml)
  • oil - 1 1/2 cups (300 ml)
  • lemon juice - 2 tbsp (30 ml) freshly squeezed
  • tarragon - 2 pinches
  • lovage - 1 pinch
  • salt - 1/2 tsp.
  • garlic - 1 clove

  • mustard - 1 tbsp.
  • vinegar - 1 tbsp.
  • agave syrup - 3 tbsp.

How to make

Heat the soy milk with the crushed garlic cloves. It is best to be heated in a water bath and the temperature should be monitored with a kitchen thermometer not to exceed 100°F (37 degrees).

Add the salt and spices - lovage and tarragon and while maintaining this temperature, start pouring the oil in a fine stream while vigorously beating.

This process takes 3 minutes and the mixture should slowly emulsify and thicken.

When this happens, pour in the freshly squeezed lemon juice and stir vigorously again, but this time for a short while.

This is the main fish sauce, which is very suitable for fish and will enchant you with its taste and aroma.

Separate half of it and for a different taste, add agave syrup to the other half - 3 tbsp., 1 tbsp. vinegar and another with mustard. You can also add a pinch of salt to further add contrast to the flavors.

Mix well and serve the pan-roasted, grilled or oven-baked fish with these two lovely vegan sauces.
