How to make
This delicious fish sauce requires patience and precision in its preparation, but the result is a sufficient reward for the effort.
Remove the butter and leave it at room temperature.
Boil water in a small pot. Put the almonds in the boiling water and remove the pot from the heat. After 15 minutes, strain or remove them with a slotted spoon. Leave them to cool.
Peel their skin and crush them in a mortar. Sliced almonds can be bought and the process continues by crushing the nuts in the mortar.
Gradually pour a glass of hot water. The one, in which the almonds have soaked in, is used. The stirring continues. At this stage, a blender can be used if desired.
Only the yolks are separated from the eggs.
Beat the softened butter and add the yolks one after the other, by stirring gradually. To this mixture add the prepared almond milk and mix everything. Season with 3 tbsp. of lemon juice, the sugar and salt.
Put the mixture on the stove in a small pot and stir at all times with a long wire whisk. Wait, until it boils and immediately pull the pot away from the heat.
This way the yolks undergo heat treatment and the almond fish sauce can be prepared the day before and stored in the refrigerator.
