Break the chocolate mass into small pieces and melt it with the butter in a water bath.
Once a smooth homogeneous mixture is obtained, turn off the stove, but leave the cookware still there.
Separate only the egg yolks and beat them along with the stevia into a fluffy foam with a mixer.
Reheat the hob to the lowest degree. Then start pouring the egg yolks into the chocolate. Stir until the mixture thickens.
Pour it into dessert bowls and store the mousse in the refrigerator for a few hours. Serve the mousse well chilled.
Serving idea - pre-moisten and leave the dessert plates in the fridge. Then pour the hot mousse directly on top and cool it well.
Before serving, turn the mousse over carefully. It should have set and completely taken the shape of the bowl.
