Ingredients

  • spinach - 17.5 oz (500 g)
  • onions - 1 head
  • broth - 4 1/5 cups (1 liter)
  • cream - 1/2 cup
  • starch - 1 tablespoon
  • oil - 2 tsp
  • eggs - 1
  • salt
  • black pepper
  • nutmeg

How to make

Sauté the chopped onion, add the broth and starch dissolved in milk. After the water boils, add the cleaned and chopped spinach and cook it for 5 minutes.

Put the soup through a sieve, add the butter and thicken it with yolk. Season with salt, pepper and nutmeg to taste.
