"It is easy to prepare your favorite spinach soup even in winter, if you have frozen spinach on hand"

Ingredients

  • frozen spinach - 0.9 lb (400 g)
  • broth - 8 cups (2 liters)
  • onion - 2 onions
  • quinoa - 3.5 oz (100 g)
  • carrots - 4 pcs.
  • salt
  • oil
  • black pepper
  • bay leaf - 2 - 3 leaves

How to make

Remove the frozen spinach from the freezer and leave it to defrost. Wash it.

You can use any type of broth to your liking. I had boiled pork liver for another recipe, so this was a good recipe to use up the broth for.

Cut and fry the onion, add the spinach and stew with the spices. Pour the rest of the broth.

Add the carrots (cut into circles) and the quinoa. Boil until the quinoa cracks.

If desired, you can thicken the soup with yogurt and egg or leave it leaner and more dietary.

If you decide, that you want to thicken the spinach soup a little more - add more quinoa.
