Ingredients

  • spinach - 0.9 lb (400 g)
  • carrots - 2 pcs.
  • rice - 1/2 cup
  • tomatoes - 2 pcs.
  • garlic - 3 cloves
  • oil
  • salt
  • yogurt - 7 oz (200 g)
  • yolks - 2 pcs.
  • flour - 1 tbsp.

How to make

Clean and wash the spinach. Put it in a colander to drain the water well. If the leaves are large, cut them, but not finely.

Put the spinach to stew in a little heated fat, by stirring occasionally.

When the spinach has reduced in size, pour about 1.5 liters of hot water. Add the chopped carrots, grated tomatoes and chopped garlic.

Leave them to boil for about 15 minutes and add rice. Boil, until the rice is fully cooked and remove it from the heat.

In a bowl, mix the egg yolks, yogurt and flour. Add a few ladlefuls of the hot spinach soup to the mixture, by stirring at all times. In a thin stream and while stirring, pour the thickener over the hot spinach.

Return the spinach soup back onto the heat, season it with salt and as soon as the soup boils again, remove it from the heat.
