  • milk - 17 fl oz (500 ml)
  • beef tripe - 2.2 lb (1 kg)
  • flour - 4 tbsp.
  • oil - 6 - 7 tbsp.
  • black pepper
  • garlic
  • salt

How to make

Clean and wash the tripe, put it in a pressure cooker and fill it up with water. Add salt, a few cloves of garlic and peppercorns. Boil the tripe until it's ready.

Cut the boiled tripe into small cubes and strain the broth from the cooking.

Pour the oil into the pan and when it heats up, add flour to fry and change its color. Pour the cold milk and some of the strained broth.

Stir almost constantly until the liquid boils. Add the sliced tripe.

Season the tripe soup with crushed garlic and as much black pepper as you like.

Serve it while it's warm with hot dried peppers and garlic vinegar.
