How to make
Grate the zucchini without peeling them in advance. Season them with salt, stir and leave them in a large strainer to strain them from the water they will release.
In order not to wait too long, after an hour has passed, you can squeeze the grated zucchini.
Put them in a bowl, add the cottage cheese, egg whites, garlic - crushed or grated, black pepper and salt, if necessary. Stir well.
Add the flour and stir again. If necessary, add more of them until you have a firmer mixture.
Line a baking tray with parchment paper, grease it with olive oil and add spoonfuls of the mixture on it and shape the vegetable patties with your fingers. Drizzle them a little more olive oil on top.
Bake the amazing zucchini patties at 390°F (200 degrees) until they aquire a nice golden brown color.
