How to make
Heat 2 tbsp. of olive oil in a pan and fry the onion and sliced peppers for 10 minutes.
Add the remaining olive oil and fry the garlic and chopped zucchini for 5 minutes.
Beat the eggs with salt and black pepper and mix them with the grated provolone.
Pour the egg mixture over the vegetables and fry it.
Serve the frittata with salad of your choice. Optionally, you can add other vegetables such as carrots and broccoli.
