How to make
Heat a few tablespoons of olive oil in a frying pan and fry the finely crushed leeks. Leave it aside to cool. Separately mix corn flour with some of the milk. Stir and add the remaining milk, eggs and cream.
Season the mixture with salt and pepper and mix well. Finally, add the grated Parmesan or Gruyere – or cheese and the crumbled feta cheese. Pour the mixture into a baking dish, covered with baking paper, add the braised leeks and coarsely chopped chives.
Mix gently and lightly. Put in to bake in a preheated 430°F (220 °C) oven for 25-30 minutes or until it hardens and gets a golden color.
Serve lightly cooled and cut into pieces.
