"For the hot pepper lovers - flavourful Chilli Pepper Paste, to keep handy in the fridge"

Ingredients

  • red chilli peppers - 1.1 lb (500 g)
  • sugar - 1 tsp.
  • salt - to taste
  • lemons - juice and zest from 1 - 2 lemons
  • olive oil - 1/2 cup (100 ml) or more
  • garlic - 3 cloves
  • parsley or cilantro - 2 tbsp finely chopped

How to make

Remove the stalks and seed the peppers. You can leave the seeds if you wish.

Cut the peppers into chunks, if they are large. Place them in a blender. Add the sugar, salt to taste, lemon zest and juice, crushed garlic and parsley or cilantro .

Blend the ingredients by adding the olive oil gradually. Once you achieve a homogeneous texture your chilli paste is ready.

Transfer it into a jar and preserve in the fridge.
