How to make
Chop the mint finely. Cut the avocado in 2, remove the pit, peel the rind. Cut the avocado into thin slices.
Cut each pepper in 2 lengthwise, remove the seeds and stems. Smear each half with cream cheese.
In half of the pepper halves, place several pieces of avocado and some pesto sauce on top. Sprinkle with salt and chopped mint.
Cover with the remaining pepper halves, press together and serve.
