How to make
Wash the peppers and dry them. Toast them, peel and remove their seeds, being careful not to tear them. Stir the crumbled feta cheese with the eggs and diced parsley. Fill the peppers with the stuffing.
Preheat frying oil. Roll each of the stuffed peppers in flour or breadcrumbs and beaten eggs and drop to fry up to a nice red on both sides.
Serve 2 stuffed fried peppers, topped with a spoonful or two of yoghurt, a sprig of parsley, and a few chopped small tomatoes.
