How to make
The beans are washed and covered in cold water. Soak them for about six hours.
Then pour the water out, pour new water over the beans and add a teaspoon of baking soda.
Once the water boils, the water is discarded once again and the beans are washed and transferred into a clay pot.
Add finely chopped onions, carrots and peppers to it. The garlic cloves are added whole.
The tomatoes are finely chopped or blended and also added into the clay pot. Add the spices - paprika, mint, celery leaves and costmary.
For a spicy taste you can add a hot pepper.
Add oil and water, cover the clay pot with its lid and place it in a non preheated oven.
The beans are baked in a clay pot for the first half hour at 430°F (220 degrees), after which the temperature is reduced to 360°F (180 degrees) and baked for one more hour.
Just before the bean dish is cooked, add as much salt as you desire.
