"Call me old-fashioned but the tastiest beans for me are always going to be Traditional Beans cooked in a Clay Pot."

Ingredients

  • beans - 1 cup (250 g)
  • onions - 1 head
  • carrots - 1
  • peppers - 2
  • tomatoes - 1
  • savory
  • spearmint
  • parsley
  • salt - to taste
  • flour - 1 tbsp
  • paprika - 1 tsp
  • oil
measures

How to make

Soak the beans in cold water for a few hours. Then rinse them and put them in a clay pot. Pour in water and put it on a cold stove (it needs to heat up slowly so it doesn't crack).

Leave the beans to boil and after 30 min. add the chopped onions, carrots and peppers.

Cook the beans on low heat for about 4 hours. Once they soften, add the vegetables, salt, tomatoes and spices.

After 10 min. make a roux from a little oil, the flour and paprika. Add it to the beans and after 5 min. take the pot off the stove. Sprinkle with chopped parsley.
