How to make
Crushed onions are simmered with a little water, then add the finely chopped or grated carrots. Once softened, add the pureed tomatoes and let the sauce simmer for 10-15 minutes with a lid.
Finally, add the crushed garlic and salt to taste. Peel the peppers and roll them in flour, beaten egg and flour again and put the to fry in preheated oil, until ready. Strain on paper.
In each plate, put 2 peppers, top with sauce and sprinkle with parsley.
