How to make
Peel the onions and potatoes, cut them in half and slice them. Wash the quince, seed them and cut them in the same way. Cut the meat into large chunks.
Grease a baking tray, add the potatoes, onions and quince. Arrange the meat on top, season with the herbs and spices, add the sugar and finely chopped chilly pepper. Pour in the vegetable stock and cover the tray with tin foil.
Preheat the oven to 320°F (160 degrees) and bake for 1 hour and 30 minutes. Remove the tin foil and bake for 20 additional minutes at 360°F (180 degrees), until the meat turns golden brown.
You can finish baking it in the round bread loafs. Take 4 small loafs or 2 larger ones, cut off the top and make bread bowls. Fill your bread bowls with the pork stew.
Place them in a tray and bake for approximately 20 minutes. Sprinkle with finely chopped parsley and serve.
