Ingredients

  • mussels - 4.4 lb (2 kg)
  • white wine - 8.5 fl oz (250 ml)
  • parsley - 2 bunches
  • garlic - 1 head
  • bay leaf - 1 pc.
  • flour - 3 tbsp.
  • breadcrumbs - 3 tbsp.
  • black pepper - 1 pinch
  • onion - 2 onions
  • thyme - 2 stalks
  • butter - 4.4 oz (125 g)
  • broth - 10 fl oz (300 ml)

How to make

The mussels are soaked in water. Then the shells are rubbed thoroughly with a brush. Then place them in a deep pot and add water.

Add half of the pre-chopped parsley, onion, garlic and spices. Cook the mussels for about 5 minutes on low heat. Then cover the pot with a lid and shake it vigorously, so that the shells open up. Once they are opened, add the butter.

Put the remaining amount of onion in a separate pot and boil in the wine until half of it evaporates. Then add the broth in which the mussels have been boiling in, in which the flour and breadcrumbs have been dissolved beforehand.

Stir until the sauce thickens. The mussels are served warm and drizzled with the onion sauce. Optionally, you can sprinkle them with parsley.
