How to make
This Italian-style omelette is quick and easy to prepare and can be combined with many different vegetables.
In Italy, they add boiled pasta to the eggs, but I have skipped it to make the omelette healthier.
Stew the sliced pepper and zucchini with olive oil and butter, add spring onions, black pepper and salt.
Stir (only stir it this time) and add the beaten eggs, which you have beaten with a whisk. Add salt and leave them on a low heat to cook without stirring them.
Usually the omelette is ready in about 6-7 minutes on low heat.
Serve with chives and parsley. This Italian-style omelette is a great breakfast to start the day off with. Enjoy!
