How to make
Blanch the finely chopped broccoli in a bowl of salted water for about a minute. Take them out and cool them in a bowl full of crushed ice. Strain them.
In a bowl, beat the eggs, salt and black pepper. Add thyme and broccoli.
Fry the onions and tomatoes and add the eggs to them along with the broccoli.
Stir and fry it on both sides in a pan and make sure it doesn't stick.
Place it in a baking pan and sprinkle it with crumbled white cheese.
Bake it in the oven for only a few minutes, on the top rack until the cheese melts and the omelette froms a golden crust.
Serve the omelette chilled.
