How to make
Clean the gills and entrails from the mackerel and wash them. The heads and tails are left.
Sprinkle them with the ground spices - sea salt, black, white, pink pepper, cumin, garlic and dried parsley.
Drizzle them with lemon juice and olive oil.
Cover them and leave them in cool place, so they can absorb the flavors for at least an hour.
Grill them on a well-heated grill for a few (about 3-4) minutes on each side.
As soon as they are grilled, pour the sauce, that you prepared in advance from the chopped parsley and garlic and wine vinegar, over them.
