How to make
Chop all the vegetables and saute them in hot olive oil, first the onion, then the carrot and celery, 5-6 minutes later the potatoes and finaly the squash and garlic.
Cook for a few minutes, stirring occasionally, at moderate heat.
Pour 5 cups of hot water, 2-3 pinches of salt and cook for around 20 with a lid. Add some hot water if necessary.
Add the heavy cream, with the spices and the herbs. Season with salt if needed. Remove from the stove.
Blend to a very fine consistency, depending how thick you like it to be, you can always add a little vegetable stock or cream.
Serve with cilantro leaves on top!
