How to make
The vegetables for the delicious vegan soup are cut into cubes and the onion and garlic are finely chopped.
Heat oil in a deep pot over medium heat and add the onion, fry briefly, then add the finely chopped garlic, potatoes, carrots and zucchini.
Add hot water, two fingers above the vegetables. Season and boil, until the soup is done.
When the vegetables are cooked, pull the pot aside and liquidize it very well. Place it back onto the heat, add the soy milk and cook the easy potato soup for another 5-10 minutes.
Serve the vegan potato soup with soy milk warm, optionally with croutons and a slice of lemon.
