How to make
Cut the pork into small pieces and sear it in olive oil. Remove it from the pan and drain the excess oil. In the same pan and oil saute onions, garlic, ginger and curry.
Cook for a couple of minutes stirring occasionally.
Add the lime zest and the lime juice. Pour the coconut milk and bring to a boil.
Then bring back the pork into the pan.
Season with salt and pepper and simmer for around an hour, while stirring a few times. Serve your Pork Curry warm with a few cilantro leaves on top.
