How to make

This is a variant of Gazpacho, which is no less delicious and refreshing than the well-known Gazpacho, which is prepared with a tomato base and is called Andalus.

You will also find the white Gazpacho under the name Ajoblanco.

It is extremely easy to prepare and if you have a good blender, you will enjoy perfect results in just two minutes.

Take the almonds and put them in 2 cups of warm water to soften.

Pour them together with the water into the blender cup.

Add the garlic, salt, vinegar, olive oil, and bread, which you can break up, to make it easier for the blender.

Blend on medium speed and gradually increase to maximum, grinding it for at least 2 minutes to become perfectly smooth.

Add another 2 cups of water or as much as you would like the density of the cold soup to be.

The water can be added to the blender itself, but this depends on whether the capacity of the blending cup on your appliance is enough.

Finally, season with more salt and vinegar, if necessary, according to your preferences.

Pour into a jug or bowl and refrigerate to cool before serving.

Serve the white gazpacho in wide cups or bowls and sprinkle with olive oil and lightly roasted sliced ​​almonds.
